Rocky Road Brownie Bars. Quite a handle right? Rocky road for the marshmallows and nuts. Brownie for the crusty edges and bars for the gooey center. Me like rocky road brownie bars.... omn num num num.
What you need: 1/2 cup shortening, 2 eggs, 1/2 cup heavy cream, 1 package of chocolate pudding mix, 1 TB vanilla, 2 cups flour, 1 3/4 white sugar, 1/2 cup brown sugar, 1 1/2 cups cooking oats, 2 TB salt, 2 TB baking soda, 2 cups marshmallows, 1 packaged chopped nuts (I used almonds... about 1 cup) Preheat Oven to 375 degrees
What to do: Blend all wet ingredients. Add pudding mix and stir well. Sift in flour (add a little here, mix, then add a little more there ect). Mix in the dry ingredients, finishing with the nuts and marshmallows. Butter a baking dish. Mine is approx 3" deep & 6"x8". Pop it into the oven for 20 minutes. Check the center done-ness by sticking in a toothpick, if it comes out clean take it out, if not leave it in for a few more minutes and check the center again.
You could easily turn this into cookies, but I like the size of bars and how it comes out chewy on the edges and a bit gooey on the inside.
