Today was a baking kind of day. It started out with the usual chocolate chip oatmeal cookies, then proceeded to holiday cut out sugar cookies and after raiding my pantry and finding the mulling spices dwelling oh so lonely in the back I decided to get a lil creative and kick the baking up a notch. The result? These divine soft chewy nutty apple pie-y bits of heaven. And major bonus... baking these leaves your house smelling wondrous for the next few hours!

1 1/2 cups all purpose flour
1 1/2 cups cooking oats
1 1/2 cup brown sugar
1/4 cup white sugar
1/4 cup Aspen Mulling Cider Spices in Original Apple Spice Blend
1 cup sliced almonds
1 TB salt
1 tb baking soda
1TB Vanilla Extract
1 Large Egg
3/4 Cup Butter

In large mixing bowl mix all dry ingredients. The slice softened butter into dry mixture. Add wet ingredients. Cover bowl with freezer paper and chill for one hour. This will ease the rolling of the sticky batter into balls. Remove from freezer and spoon/roll golf ball (or slightly smaller) sized balls onto a butter greased cookie sheet. Bake at 325 degrees for 10-12 minutes until bottom edges are slightly browned and a toothpick comes out clean from center of cookie.

Important Note: This will make your house SMELL AMAZING!!!! So if you are having a holiday party or an open house this recipe is a must! Like warm apple pie with a kick! Yum yum yum!
