Don't know if I should show you this.... These are my secret weapons. I guess if I swear you in to my secret circle of trust I can show you. Ready, repeat after me "I (say your name) promise to make these yummy cookies in the event of an emergency (or just because) and promise to share with everyone". Ok we are gtg.
  If I really need to impress someone or need a last minute hostess gift I always make these. They are yummy and puffy and are just plain cinnamon and sugary goodness. Enjoy!

Ingredients: 1/2 cup butter, 1/2 cup shortening, 2 cups white sugar, 2 eggs, 3 cups flour, 2 teaspoons vanilla, 1 teaspoon baking soda, 1/2 teaspoon sea salt, 1 tablespoon cinnamon.
Mix a generous amount of white sugar and cinnamon in a small bowl.
Preheat oven to 400 degrees
What to do: Blend butter, eggs, vanilla and shortening together. Sift in flour. By sift I mean pour in a little here, mix, then pour in a little more there, mix, and finish pouring in the rest, mix. Stir/chop in the rest of the ingredients. A lot of people don't put cinnamon in the dough, but I really like it, so I do.
Pop the bowl in the freezer for 10 to 15 minutes. This helps firm up the dough.
Pull it out and and scoop out and form 2" balls. Plop those in the cinnamon and sugar mixture and swirl around. Really give them a good coating. Place about three to four inches apart on a butter greased baking sheet.
Bake at 400 degrees for EXACTLY 8 minutes. Not a minute more or less.
Pull them out and remove right away from the baking sheet on to a cool plate of cookie rack. This is key to remove from the hot sheet, helps keep them puffy.  Do a generous sprinkle some of the cinnamon and sugar mixture on top. Yummy!
