Wish I had more pics of this sucker… but trust me it went FAST!
This delish pie is composed of a super scrumptious sweet potato pie with bacon and blue cheese lattice. Looks and sounds complicated but it really is not. This is THE dish you want to bring to any holiday potluck. Here we go…
Ingredients:
- 1 sheet refrigerated pie pastry or ready-made pie shell
- 1/4 cup butter
- 1 cup brown sugar packed
- 2 eggs
- 2 cups mashed sweet potato
- 1/4 cup half-n-half
- 1 tsp vanilla
- 1/2 tsp pumpkin pie spice
- 1/8 tsp salt
- 1/4 cup blue cheese crumbles
Lattice Top
- 1/2 cup packed brown sugar
- 4 tsp balsamic vinegar
- 8 thick-sliced bacon strips
- 1/4 cup blue cheese crumbles
Unroll pastry into a 9-in pie plate; flute edges.
In a large bowl, cream butter and brown sugar until light and fluffy. Add the eggs, sweet potato, cream, vanilla, pumpkin pie spice, and salt; beat until blended Pour into pie shell.
Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center comes clean.
Sprinkle with cheese. Cool on a wire rack.
Increase oven temp. to 400 degrees. Combine brown sugar and vinegar; press mixture onto both sides of bacon strips, Arrange bacon strips on a broiler pan in a lattice form. Lightly coat the bottom of a baking sheet; place it over the lattice.
Bake for 15 minutes. Uncover; bake 5 minutes longer or until edges are crisp. If necessary trim edges; place the lattice on the pie. Crumble the remaining blue cheese on top. Cut with a serrated knife. Serve cold or at room temp. Refrigerate leftovers.
